Green tea production in Japan
Japanese green teas are considered unoxidized . After picking, the leaves are quickly steamed (20 to 40 seconds) to stop the oxidation process. This essential step allows them to retain their vibrant green color and aromas . Although green tea is also produced in China, Japan has distinguished itself with its unique production methods , resulting in rich, smooth, and balanced flavor profiles. In Japan, green tea accounts for over 99% of production , which reached 75,000 tons in 2023.
It includes several iconic varieties of Japanese green teas :
Sencha, Genmaicha, Gyokuro, Hōjicha, Matcha, Bancha, and many more.
The rhythm of harvests
The tea harvest takes place from mid-April to October, according to four distinct periods:
First harvest (April – May) : the most renowned, this is the one that is preferred, because it gives the most delicate teas.
Second harvest (June – July) : more robust, it offers a more pronounced taste.
Third harvest (July – August)
Fourth harvest (August – October)
The leaves from the first harvests are particularly prized for producing the finest teas. It should be noted that most producers will only harvest once or twice a year at most. Repeated harvests weaken the tea plant, leading to a decrease in both the quality and quantity of the production.
Sencha, the emblem of Japanese tea
With nearly 51% of production, Sencha is the most representative tea of Japan.
Its thin, elongated leaves resemble dark green needles, and its vegetal, sometimes slightly briny taste reflects the richness of the Japanese terroir.
Grown in full sun, unlike other shade-grown teas such as Gyokuro or Matcha, Sencha develops a perfect balance between umami, astringency, and sweetness.
